Chicken Dish w/Apricot Curry Jam & Old-Soldier Coffee Infused Rub glaze

The folks attending the Colorado Springs Holiday Food & Gift show were treated to a number of delicacies created by Consulting Executive Chef Jeremy Becker throughout the 3 day show.

This demonstration created a simple chicken dish using a boneless chicken breast, 'Old-Soldier Coffee infused Mexican Poultry/Seafood rub, Ant D's Apricot Curry Jam, and some mixed peppers.

The purpose of these demonstrations was to elaborate on how to eat healthy using no salt and low sugar to create and enjoyable easy to prepare meal for the busy life style we live.

The dish utilized the following ingredients:

1/2 jar Ant D's Apricot Curry Jam

1 Boneless chicken breast cleaned and pounded to 1/2 inch

1 TBSP 'Old-Soldier Coffee infused Poultry/Seafood Rub (Divided)

1 TBSP Olive Oil

1/4 Chopped Green pepper

1/4 Chopped Red pepper

1/4 chopped red onion

To Prepare:

In a small bowl, place the Apricot Curry Jam, 1/2 TBSP Olive Oil, & 1 TBSP of the Poultry Rub blend to a sauce. Heat a skillet on medium low and when heated add the remaining olive oil and chicken breast and 1/2 the blended sauce. Turn frequently until chicken is cooked thoroughly through approximately 10 minutes. Cut into equal portions place on plates and drizzle the remaining sauce over each portion. Serve with couscous or rice and a green salad on the side. Serves 2
