Healthy eating from 'Old-Soldier' Coffee infused Rubs & Spices

With our past business we were on the road for days and months at a time. Over that time this led to way to many truck stop and restaurant meals. I wouldn't say it got out of hand but after completing our annual physical our family Doctor gave us an ultimatum either I learn to eat healthy or find a new Doctor because, as she put it, 'I won't be responsible for your death'!! Needless to say it woke me up and I have changed my ways. You will notice on these recipes a lot of seafood, poultry, and greens with a minimal amount of red meat. That's not to say I don't enjoy an occasional filet but they are far and few between. This is also what brought about, 'OLD-SOLDIER' rubs and spices.

The video of the sea bass recipe is one of our favorites. It's easy to make and has a great taste. If you can't catch the recipe on the video here it is:

>Wipe down the filet with a paper towel

> coat with olive oil rub in 'OLD-SOLDIER POULTRY/SEAFOOD RUB'

> Add chopped, thai basil, leafy oregano, thyme, basil in a plastic one (1) gal. bag along with the filet.

> Place in the refrigerator for at least an hour. I believe we left it in for 4 hours on the video.

> Heat your grill until hot then turn off one burner and set the other to low.

> Place the filet skin side down on the grill and cook for 4 to 6 minutes so that fish flakes but is not dried out.

> While the fish is cooking grab the 'OLD-SOLDIER SALAD SEASONING', olive oil, and white wine vinegar.

> Blend a 1/4 cup of olive oil and vinegar each and 2 tbsp. of salad seasoning in a bowl and stir.

> Mix about 2 cups of romaine lettuce, 1/4 cup raisins, 1/4 cup cranberries, 3 sweet peppers sliced long way and place in a bowl with croutons .

> Pour in the dressing and toss to mix.

Now ENJOY!!! Oh yes, did I mention the seasonings used in this meal are all natural, sugar & salt free and 'Devil Dog' coffee infused.
