Mardi Gras is over but that doesn't mean we can't enjoy some of the recipe's from the Cajun country. For the sausage in this recipe I used a spicy Italian sausage from a local supplier in Denver, Bavarian Sausage. Herb and his wife offer a great variety of old world products at local Farmer's Markets during the season. The seasoning for this one is 'Old-Soldier Mexican Poultry/seafood rub'. The entire recipe and ingredients are attached. I serve this with a warm crusty French Baguette. This recipe serves six (6) and goes well with a bottle of JAX beer. ENJOY!!
