Old-Soldier quick & easy stuffed mushrooms for 2

Some folks I know follow the Catholic practice they were brought up with of abstaining from meat on Fridays during Lent, and are looking for a quick and easy meal to have to unwind with after the week and not go out for another "Fish Fry".

The married woman I've been living with for the last almost 47 years and I also were trying to decide on what simple yet attractive meal we could have one Saturday night after a day of working around the house. We didn't really want to go out, just veg for the evening and enjoy a good meal and each other's company. I rummaged through the fridge and found we had some large mushroom caps which were to be for another meal, a few orange roughy fillets, and some assorted peppers and veggies. I decided on using what was on hand and blending it with my, Old-Soldier Coffee infused Mexican poultry/seafood rub.

Now, I decided to use some gluten free crackers to see how it would taste and give an option to my friends who have allergy issues. I decided to add some parmesan cheese but if gluten is an issue this can be omitted creating a total 'Gluten free' meal. And for my Eastern friends the Jalapeno peppers are also an option but I must admit do add a bit of "ZING!" to this dish. Here is the recipe.
