Old-Soldier salmon dish for 2

Healthy summer salmon dish

The 'Dog Days of Summer' are upon us and most of us want to enjoy a simple meal on the patio with that someone special. This week I took a wild caught salmon steak and created a simple meal for two. In Colorado this time of year is Olathe corn season. This juicy corn grown in the Colorado high country is a great treat especially cooked in foil over a grill.

I take the corn and coat it with butter, we use Smart Balance, then dust it with 'OLD-SOLDIER' taco seasoning. I wrap it in foil and throw it on the grill usually five (5) minutes prior to placing the salmon.

For the salmon my wife Sue, chopped some fresh herbs from her small garden along with home grown green onions (2), added two tablespoons of 'OLD-SOLDIER' salad seasoning and one tablespoon of 'Agava' to give it a bit of sweetness and placed all this into a gallon plastic bag to marinate for the afternoon (approx. 3 hrs).

The salmon only took 5 minutes to cook and by that time the corn was done and we enjoyed a light healthy meal topped off with a margarita! The video explains the entire meal prep. ENJOY!!
