Slow-cooker Chicken Enchilada Soup

It’s January and usually no matter where you live its either downright cold or at least chilly. That means its time for some comfort food and this soup is the perfect fix. My wife took her recipe and modified it to use 2 tablespoons of my Coffee infused all natural, Chili seasoning. That’s right, the only salt or sugar comes from the canned ingredients call for in this recipe. So if you need some comfort tonight and want to control the sugar and salt in your diet give this one a try.


What you need:
1 10 oz can red enchilada sauce 1 14.5 oz can diced tomatoes with green chilis

It's summer and non of us like to spend more time than we have to in a hot kitchen. Let's face it, we want to be outside enjoying the great summer weather before old man winter once again, rears his ugly face!
We also want our meals to be healthy & tasty and I believe I've come up with a simple meal that meets both of these goals. Firts the meat portion of this delight:

The weather is great and the grill is just begging for use! This recipe is for the, 'seafood' lover out there who wants to enjoy a great summer evening on the patio yet make a meal that is easy to prepare so they can sitdown and enjoy each others company along with great food and not have to go to a busy restuarant!
